Just after some quick, simple & cheap toddler meal ideas. My girl is 18 months old and 99 % of the time has exactly what we're having but on the odd occasion if she happens not to eat with us (if daddy working late) or if we have food too spicy for her I make her something else. I don't like buying pre- made toddler food, i'd rather make my own so any nice simple ideas appreciated!!!

I always keep a box of mashed potatoes, frozen chicken nuggets, and a couple of cans of the kids' favorite veggies for a quick meal. This is quick and it can always be around sense they all have a long shelf life. Also pasta, caned fruit, grilled cheese, hot dogs, Easy Mac, scrambled eggs, leftovers...

Lightly seasoned beef with macaroni - reheats well and you can throw some shredded cheese on it before you heat it up. I've used beef left over from taco night for this and it works well. I make my son grilled cheese sandwiches for lunch frequently, you can put different vegetables in there, ham, turkey, whatever, serve some green beans or carrots on the side and it makes a fun and reasonable meal. I've made Annie's Mac and Cheese and then added some pieces of chicken and broccoli to it to "round it out " a little. Quesadillas - basically the same idea as a grilled cheese sandwich - are currently a big favorite of my sons.

Risotto is quick and easy - and you can make it what ever flavour you like - just start off with the basic rice, stock and onions base and then add whatever you want. My daughter's favourites are mushroom risotto, butternut squash and tomato risotto, pea and ham (or bacon) risotto and lemon and leek risotto. They freeze really easily and can be defrosted quite quickly too if you need a spare meal in a hurry. Other things to consider are omlettes - again you can add whatever you like to them, a tortilla/ fritata/ spanish omlette is good too. Cold pasta with olive oil, pine nuts and spinach is also a firm favourite here. Fish pie, sheperds pie, jacket potato with cheese and beans...
